Blueberry Vegan Waffles



Blueberry waffles for the win, no joke; hands down, the best blueberry waffles ever. You have got to try this batter either as a waffle or a pancake. 

The delicious ingredients are: 

  • 1/2 cup gluten free flour 
  • 2 TBSP ground flaxseed 
  • 1 tsp baking powder 
  • 1 tsp coconut sugar
  • 1 tsp vanilla extract 
  • 6 ounces soy milk 
  • 1/4 cup blueberries folded into batter at the end. 


For the flour, I used gluten free; however you can use whichever flour best suits your fancy. Also, you can choose to replace the flaxseed with almond meal. As for the soy milk, you can replace with any other milk alternative (coconut, almond, etc.). 

Prior to heating waffle maker either spray or rub coconut oil or avocado oil on surface to prevent the waffle base from sticking. It typically takes approximately 2 - 3 minutes to cook depending on how much batter you use. As each waffle is done, put on cooling rack until you're done cooking all the waffles.

Then top with vegan butter or coconut whip cream, maple syrup and lastly add a sprinkle of hemp hearts. 

This recipe makes 1 - 2 servings. If you want to make more, just multiply the ingredients by the number of servings you want to make. Easy breezy!
